He shows how this advanced technique provides insights in both targeted and non-targeted analyses , offering deeper understanding into EVOO's chemical profiles. Dr. Zoccali highlights how GCxGC-ToF MS enhances the detection of contaminants and key compounds, such as antioxidants and sterols, which are essential for assessing quality, authenticity and flavor.
